1995 Inniskillin Cabernet Franc Icewine (375ml)
Cabernet Franc is an unlikely, but interesting candidate for ice wine. Its brilliant red color and classic aromatics of baked strawberry and rhubarb pie, yield rich flavors of strawberries and cream. This wine shines when teamed up with cooked or baked fruit courses featuring cherries or wild strawberries with crème fraîche. Its spicy exotic quality is underlined when contrasted to foods with hazelnut and dark chocolate.
The Cabernet Franc harvested in 1995 showed full maturity, clean, sound berries and a perfect sugar / acid balance. The quality of this vintage is shown in the richness, depth of flavour and intensity of colour. Typically soft on the palate, this wine displays ripe fruit aromas, reminiscent of plums, and black currants.
Very few wineries make Cabernet Franc ice wine and only 2 or 3 really do it right. This bottle I acquired when I visited the winery itself. It was like a pilgrimage to Mecca. This is the only way to get the opportunity to buy such a vintage bottle, except from another collector/connoisseur like myself as you are being offered here.
